The purpose of this project is to identify the transmission routes for Campylobacter to broiler flocks and recommend actions at farm level to reduce the number of chickens with Campylobacter. Furthermore, to analyse routines at slaughter including cleaning of slaughterhouses and transport crates to find optimal methods to reduce contamination of Campylobacter in slaughterhouses.
Campylobacter in chicken has received great attention in media during the last two years due to increased number of human cases with campylobacteriosis. In 2016 County Medical Officers urged consumers not to eat fresh chicken. The National Food Agency published studies indicating chicken from a certain slaughterhouse as risk products. This have reduced the demand for Swedish chicken the last two years.
A reduction of Campylobacter in chicken would decrease human cases of campylobacteriosis and increase the confidence of Swedish chicken, leading to increase the profitability for the Swedish chicken industry.
Syftet med detta projekt är att identifiera olika smittkällor och smittvägar för Campylobacter till kyckling och rekommendera åtgärder på gårdsnivå för att minska antalet kycklingar med Campylobacter. Dessutom ska rutinerna vid slakt studeras, inklusive rengöring av slakterilokaler och transportlådor, för att hitta optimala metoder som minskar kontamineringen av Campylobacter på slakterinivå.
Campylobacter i kyckling har fått stor uppmärksamhet i medierna under åren på grund av ökningen av antalet rapporterade fall av campylobacterios hos människa. Under 2016 uppmanade smittskyddsläkarna konsumenterna att inte äta färsk kyckling. Livsmedelsverket publicerade studier som pekade ut kyckling från ett visst slakteri som riskprodukter. Detta minskade efterfrågan på svensk kyckling.
Om färre kycklingar drabbas av Campylobacter skulle detta innebära att färre människor blir sjuka och ökat förtroendet för svensk kyckling, vilket leder till ökad lönsamhet för den svenska kycklingindustrin.
