Cleaning and disinfection are critical elements for meat premises when it comes to production of safe food of high quality. It is the responsibility of the meat premises to ensure this is done efficiently to keep levels of pathogenic, spoilage and antimicrobial resistant bacteria low. This can be particular challenging if bacterial biofilms are present, which can make bacteria resist cleaning and disinfection. The project aims to reduce pathogenic, spoilage and antimicrobial resistant bacteria at slaughterhouses and meat production plants. This is done by characterizing bacteria using whole genome sequencing, determine their ability to form biofilm at surfaces in slaughterhouses and meat production plants, and evaluate how efficient different cleaning and disinfection methods are with a particular focus on biofilm. The project is performed in cooperation with meat premises and contributes to increased shelf life and safer food of animal origin, which benefit the consumers.
Rengöring och desinfektion av livsmedelsanläggningar är förutsättningar för att säker mat av hög kvalitet ska produceras. Det är företagarens ansvar att detta görs på ett sätt som minimerar förekomst av sjukdomsalstrande-, produktförstörande- och antibiotikaresistenta bakterier. Detta kan vara speciellt svårt i de fall det finns bakteriell biofilm som gör att bakterier kan motstå rengöring och desinfektion. Syftet med projektet är att minska spridning av sjukdomsalstrande-, produktförstörande och antibiotikaresistenta bakterier. Detta görs genom att kartlägga bakterier med hjälp av helgenomsekvensering och fastställa deras förmåga att bilda biofilm i slakteri och köttanläggningar, samt genom att utvärderar rengörings och desinfektionsmetoder med fokus på hur effektiva de är mot biofilm. Projektet genomförs i nära samarbete med livsmedelsföretag och bidrar till ökad hållbarhet och säkrare animaliska livsmedel vilket gynnar konsumenterna.
