In Sweden, there is both a great potential and a great need for increased cultivation and processing of plant-based foods from alternative protein crops. The overall aim of the project is therefore to increase the production of Swedish plant proteins for food. The objective is to identify bottlenecks and possible solutions from experimental cultivation to cultivation on a commercial scale. In the proposed project development needs will be identified and the soft factors that need to be addressed to accelerate the development of commercial production of new protein crops, this will be done through workshops and working groups. A central part of the project is practical cultivation and drying experiments based on the results from the workshops and working groups. The project will deliver a proposal on working methods and relevant technical solutions as well as advice for cultivation, handling and drying to scale up the cultivation of at least two new protein crops with development needs.
I Sverige finns både en stor potential och ett stort behov av ökad odling och förädling av växtbaserade livsmedel från alternativa proteingrödor. Det övergripande syftet med projektet är därför att öka produktionen av svenska vegetabiliska proteiner för livsmedel. Målet är att identifiera flaskhalsar och möjliga lösningar från försöksodling till odling i kommersiell skala. I det föreslagna projektet identifieras utvecklingsbehov samt vilka mjuka faktorer som behöver adresseras för att snabba på utvecklingen av kommersiell produktion av nya proteingrödor bl.a. genom workshops och arbetsgrupper. En central del i projektet är praktiska odlings- och torkförsök baserat på resultatet från utvecklingsdelen. Projektet ska leverera ett förslag på arbetssätt och relevanta tekniska lösningar samt råd för odling, hantering och torkning för att skala upp odlingen av minst två nya proteingrödor med utvecklingsbehov.
