The sensory attributes of the raw milk are of major importance for the quality of the resulting dairy products. Since the early 90’ies, the so-called “blueberry off-flavour” has caused severe economic consequences for affected dairy farmers. The mechanism behind is still unclear, although forages of poor hygienic quality and the associated microflora have been suggested to play a role. Forage quality and the naturally occurring microflora of forages are also believed to contribute to the uncontrolled and costly variation in flavour development of Swedish premium cheese; in this case, due to insufficient numbers of flavour producing lactobacilli. In this context, the effect of the botanical composition of forages and the process of ensiling on development of desirable and non-desirable flavours in milk and cheese, need to be adequately addressed. The objective of the proposed project, is to optimise forage management as one measure to increase profitability of the Swedish dairy sector.
Mjölkråvarans sensoriska egenskaper är av stor betydelse för de resulterande mejeriprodukternas kvalitet. Sedan början av 90-talet har mjölk med en bismak av blåbär orsakat svåra ekonomiska konsekvenser för drabbade mjölkbönder. Mekanismen bakom smakfelet är fortfarande oklar, men grovfoder av dålig hygienisk kvalitet och tillhörande mikroflora har föreslagits spela en viktig roll. Grovfodrets kvalitet och den naturligt associerade mikrofloran anses också bidra till den okontrollerade och kostsamma variationen i smakutveckling hos svensk premiumost. I detta fallet bidrar ett otillräckligt antal smakproducerande laktobaciller troligen till problemet. Studier av hur vallfodrets botaniska sammansättning och ensileringsprocessen påverkar utvecklingen av önskvärda och icke önskvärda smaker i mjölk och ost är därför angelägna. Syftet med det föreslagna projektet är att bidra med kunskap för att optimera grovfoderhanteringen som en åtgärd för ökad lönsamhet hos den svenska mejerisektorn.
