The ability of milk to coagulate is crucial for cheese production. We have previously shown high occurrence of non-coagulating milk from Swedish Red Dairy cattle and identified milk proteins as potential markers for this undesirable trait. In this project we will increase the understanding of the functionality of milk proteins by knowing the exact amino acid sequences and variations of casein variants. This information is not yet available due to imperfections in analytical methods. Thus, the outcome of the project will provide a unique position to contribute to a common worldwide understanding of the functionality of milk proteins and the occurrence of non-coagulating milk. This is important for industrial applications in the dairy and breeding sectors to prevent the occurrence of non-coagulating milk, but also for selection of milk for specific use and health benefits. This secures increased growth, profitable and sustainable production for Swedish milk producers and dairy industry.
Mjölkens förmåga att koagulera är avgörande för tillverkning av ost. Vi har tidigare visat en hög förekomst av icke-koagulerande mjölk från SRB och identifierat mjölkproteiner som potentiella markörer för denna oönskade egenskap. Inom detta projekt kommer vi att öka förståelsen för mjölkproteiners funktionalitet genom att bestämma de exakta aminosyrasekvenserna och variationerna av kaseinvarianterna. Denna information är idag inte tillgänglig på grund av brister i analysmetoder. Projektet kommer därför att ge en unik position för att bidra till en gemensam världsomfattande förståelse av mjölkproteiners funktionalitet och förekomsten av icke-koagulerande mjölk. Detta är viktigt för industriella tillämpningar inom mejeri- och avelssektorn för att förhindra förekomsten av icke-koagulerande mjölk, men också för selektion av mjölk för specifik användning och hälsoeffekter. Detta säkerställer ökad tillväxt och en lönsam och hållbar produktion för svenska mjölkproducenter och mejeriindustri.
