Increased production and export of products with high added values, e.g. long-ripened hard cheeses, are considered important steps for a positive development of the Swedish dairy sector. Increased investment in Swedish premium cheese will, however, require increased volumes of high quality raw milk and will not allow the current variation in sensory quality and ripening time. In this project we develop new knowledge about the microflora flow from farm to cheese. With techniques based on DNA sequencing we study how on-farm factors in production and handling of silage affect the microflora of forages, raw milk and cheese and identify bacteria affecting ripening time, taste and texture of the long-ripened cheese. In the project dairy farmers, cheese industry, advisory service and researchers collaborate to develop and economically evaluate new concepts for quality assurance of forages, raw milk and long-ripened cheese with the aim to increase the profitability in the whole value chain.
Ökad produktion och export av mejeriprodukter med höga mervärden, såsom långlagrad hårdost, framförs som viktiga steg för en positiv utveckling av svensk mejerisektor. En ökad satsning på svensk premiumost kräver dock ökande volymer av garanterat högkvalitativ mjölkråvara och tillåter inte nuvarande variation i ostarnas sensoriska kvalitet och mognadstid. I projektet utvecklar vi ny kunskap om mikroflorans flöde från gård till färdig ost. Med nya tekniker baserade på DNA-sekvensering studerar vi hur mikroflorans sammansättning i grovfoder, mjölkråvara och ost påverkas av gårdsnära faktorer i produktion och hantering av ensilage. Vi identifierar även bakterier med betydelse för den långlagrade ostens lagringstid, smak och textur. I projektet medverkar mjölkföretagare, ostindustrin, rådgivningen och forskare för att utveckla och ekonomiskt utvärdera ett nytt koncept för kvalitetssäkring av grovfoder, mjölkråvara och långlagrad ost med syfte att öka lönsamheten i hela värdekedjan.
