The project aims to increase the sustainability, competitiveness and profitability of beef production by using by-products throughout the feed-animal-carcass chain. This is achieved by using by-products from the energy and food industry as feed for the final rearing of cows from milk production and by increasing the utilization of the slaughtered animal carcass "from nose to tail". Using larger parts of the animal reduces the climate impact per kilo of food produced and ensures a sustainable domestic food supply. During final fattening, different feeding strategies are compared with regard to feed consumption, growth, carcass and meat quality. The profitability of the different alternatives is evaluated. The project involves researchers, advisors, farmers, the food industry and public administration. The profitability calculations will be made by advisors who will disseminate the results via their channels. The project takes place at the initiative of Skövde slaughterhouse.
Projektet syftar till att öka hållbarheten, konkurrenskraften och lönsamheten i nötköttsproduktionen genom att använda biprodukter genom hela kedjan foder-djur-slaktkropp. Detta uppnås genom att använda biprodukter från energi- och livsmedelsindustrin som foder till slutuppfödning av utslagskor från mjölkproduktionen och att öka utnyttjandet av slaktkroppen ”från mule till svans'. Att nyttja större delar av djuret minskar klimatpåverkan per kilo producerad mat och tryggar en hållbar inhemsk livsmedelsförsörjning. Under slutgödningen jämförs olika utfodringsstrategier avseende foderkonsumtion, tillväxt, slaktkropps- och köttkvalitet. Lönsamheten i de olika alternativen utvärderas. I projektet samverkar forskare, rådgivare, lantbrukare, livsmedelsindustri och offentlig förvaltning. Lönsamhetsberäkningarna kommer att göras av rådgivare som sprider resultaten via sina kanaler. Projektet sker på initiativ av Skövde slakteri. Deras inköpare blir ambassadörer för projektets resultat.
