A cornerstone of the Swedish Food Strategy is trust in Swedish food production. Yet each year Swedish farmers and food processors lose both money and trust due to food fraud, especially for non-Swedish meat relabelled as Swedish. Most fraud remains undetected. A recent analytical development, Rapid Evaporative Ionisation Mass Spectrometry (REIMS) detects small changes in food composition based on 100s of lipids within a few seconds of making a direct measurement of a sample. Our initial tests on differentiating the same cut of meat from different countries is promising. We will develop new methods based on REIMS to ensure robustness required for long-term food testing, using beef, pork, lamb, horse and chicken meat as model systems to characterise the potential and limitations for species and origin determination. We will develop a workflow that will make REIMS easy to use in industry and testing labs making food fraud easier to detect, and ensuring continued trust in Swedish food.
Livsmedelsstrategin lyfter särskilt tilltron till svensk livsmedelsproduktion som en nyckelparameter för framgång, men tilltron hotas av matfusk. Största delen av matfusket upptäcks inte p.g.a. långsamma mätmetoder. En ny uppfinning inom masspektrometri kan vara en lösning: ’Rapid Evaporative Ionisation Mass Spectrometery’ (REIMS) kan detektera hundratals lipider i obehandlade prover inom bara några få sekunder. Våra preliminära data tyder på att detta är en mycket lovande teknik för att skilja mellan kött av samma typ från olika länder, men den enorma potentialen för REIMS inom livsmedelskvalitetsanalys har ännu inte utvärderats. Vi kommer att utveckla nya REIMS-baserade metoder, med särskilt fokus på att säkerställa långsiktig robusthet. Nöt, gris, lamm, häst och kycklingkött kommer ändvänds som modellsystem för att undersöka denna tekniks möjligheter och begränsningar för upptäck av art- och ursprung av kött och därefter utveckla robusta arbetsflöden för snabbt upptäckt av matfusk.
