The carbon footprint for ruminants is high compared to other food products of animal origin but grazing animals such
as beef and lamb have other positive effects on the environment such as increased biodiversity and carbon
sequestration. Beef- and lamb producers need clear guidelines on how to adapt production to reach the target of a
climate neutral production and simultaneously increase added values such as biodiversity and carbon sequestration.
The purpose of the project is to develop these guidelines and update the environmental footprint for different
production types in beef and lamb production. The results from the project will increase the level of knowledge of
producers, advisers and the industry about the environmental footprint for beef and lamb production and how
production can be directed towards reduced environmental footprint. The results shall also lead to motivate the choice
of Swedish meat at retail-, restaurant-, consumer- and public sector level.
Klimatavtrycket för idisslare är det högsta bland animalier men betande djur som nöt och lamm har andra positiva
effekter på miljön såsom biologisk mångfald och kolinlagring. Nöt och lammproducenter behöver tydliga riktlinjer för
hur de ska anpassa produktionen för att komma närmare målet "klimatneutral produktion" och samtidigt öka positiva
mervärden såsom biologisk mångfald och kolinlagring utan att det blir målkonflikter. Syftet med projektet är att ta fram
dessa riktlinjer och samtidigt uppdatera miljöavtrycket för olika produktionsgrenar inom nöt och lammproduktion.
Projektets resultat ska öka kunskapsnivån hos producenter, rådgivare och bransch om miljöavtrycket för nöt och
lammproduktion och hur produktionen kan inriktas mot minskat avtryck för att bidra till att de svenska och
internationella miljömålen nås. Resultaten ska också leda till att motivera att välja svenskt kött hos handel, restaurang,
konsument och inom offentliga måltider.
