Wheat bran is the largest by-product of wheat flour production with approximately 300,000 tonnes in Sweden. Bran is mainly used in animal feed, as human digestion is not fully able to absorb it. Wheat bran contains valuable biomolecules, such as dietary fiber (arabinoxylans, AX) and phenolic compounds (ferulic acid). Further processing of wheat bran therefore shows great potential for the production of food ingredients with prebiotic properties for improved health and well-being. In the proposed project we will scale up a process for isolating bioactive high molecular weight feruloylated F-AX and oligosaccharides using only subcritical water and enzymes. We will validate the prebiotic and antioxidative effects of the F-AX fractions extracted from wheat bran, as well as their effect to extend the shelf life of bread. This will increase the profitability for wheat bran, and will offer new bread products with increased durability that possibly contribute to better health and well-being.

djurfoder, då människans matsmältning inte fullt klarar av att tillgodogöra sig kliet. Vetekli innehåller värdefulla
biomolekyler, såsom kostfiber (arabinoxylaner, AX) och fenoliska ämnen (ferulasyra). Vidareförädling av vetekli innebär därför en potential för en livsmedelsingrediens med prebiotisk effekt för förbättrad hälsa och välbefinnande. I projektet kommer vi att skala upp en process för att isolera bioaktiva högmolekylära feruloylerade F-AX och oligosackarider genom att använda bara subkritisk vatten och enzymer. Vi kommer att validera de prebiotiska och antioxidativa effekterna hos F-AX fraktionerna extraherade från vetekli, samt deras effekt för att förlänga hållbarheten hos bröd utan bakningshjälpmedel. Detta kommer att öka lönsamheten för vetekli, och erbjuda nya brödprodukter med ökad hållbarhet som eventuellt bidrar till en bättre hälsa.
